¹ The restaurant I'd like to talk about is a tiny beef-noodle shop tucked into a narrow lane just behind Ximending, in the older part of Taipei. ² You could easily walk past it — the signboard is faded and there are only about eight tables inside — but the queue on a Sunday lunchtime tells you everything you need to know.
