Q1. Why do you think food is so closely tied to cultural identity?
I'd say food is one of the few aspects of culture you literally absorb — as a child, you don't choose what your family cooks, but it shapes your palate for life. Generally speaking, that gives traditional dishes a kind of emotional weight that's hard to replicate. On top of that, food is the easiest way for a culture to travel: you can explain a society through a recipe in a way you can't through, say, its politics.
Q2. Have eating habits changed compared to your parents' generation?
Enormously, at least in Taiwan. My parents ate at home most nights; my generation eats out or orders in probably half the week. Generally speaking, that's driven by longer working hours, cheap delivery apps, and the fact that home-cooking skills are being passed down less. On the other hand, there's a small counter-trend — younger people rediscovering cooking as a kind of antidote to overwork.
Q3. Is international fast food harming local cuisines?
It depends on what you mean by "harming". I'd argue global chains like McDonald's have become part of the local fabric in many countries without displacing traditional cuisine — Taiwanese people still eat beef noodle soup, they just also occasionally eat a Big Mac. On the other hand, the nutritional impact is real, particularly in poorer communities where fast food is genuinely cheaper than fresh cooking.
Q4. Should governments regulate unhealthy food?
On the whole I'd say yes, within limits. Evidence-based measures like sugar taxes, clear labelling, and marketing restrictions for children have strong research support and relatively broad public acceptance. Heavy-handed bans, by contrast, tend to generate backlash and black markets. So nudge-style regulation yes, prohibition generally no.
Q5. Will people in the future eat very differently from today?
Arguably yes, in two directions at once. On one hand, plant-based and lab-grown alternatives are likely to take a growing share of the meat market, partly for environmental reasons. On the other hand, there's a strong counter-movement towards local, seasonal, traditional eating. So I'd expect more polarisation — high-tech on one side, heritage on the other — rather than a single direction.
